We are SO thrilled to announce our Corries Bar & Bistro will be closing on Monday 19th February for a complete refurbishment! But don't worry, we will be serving our usual Evening Menu in our Liberty Tree Restaurant from 12.00pm to 9.15pm daily! Although we won't be offering carvery during the refurbishments, we will be offering Daily Roast Specials and Sandwiches from 12.00pm!

Hotel Residents on a Dinner-Inclusive Package have the opportunity to dine in our 4th Floor Liberty Tree Restaurant on Friday & Saturday evenings from 5.00 pm to 9.00 pm – however, please note this is subject to change. Featuring floor-to-ceiling windows, The Restaurant offers stunning views of the rolling Carlow Countryside. Indulge in decadent cuisine while relaxing in the elegant ambiance of the Liberty Tree Restaurant.
Breakfast is served in our Liberty Tree Restaurant, 7 days a week from 7.00 am to 10.00 am Monday to Friday, and until 10.30 am on weekends and Bank Holiday Mondays. We offer a Full Buffet Breakfast with all produce locally sourced. Our Executive Head Chef Nigel places a strong emphasis on using local fresh produce in all of his dishes!
We are delighted to be able to accommodate Group Bookings, however, please note groups of over 20 adults will dine from a Reduced Menu. Should your group wish to dine from our full A Lá Carte Menu, the tables will be split and treated as individual tables, we cannot guarantee seating beside each other.
